Known as Tombo Ahi in Hawaii. “Tombo” means dragonfly in Japanese and refers to the long pectoral fins of the Albacore that can equal as much as one third of the total length.

Depending on size, its flesh ranges from whitish-pink to deep pink in color. It’s the lightest and mildest in flavor of all Hawaii’s tunas. It is suitable for many different preparations. As raw fish, it is softer than the other tunas and is, therefore, more difficult to prepare as sashimi.

Albacore is long-line harvested in the waters of Hawaii, Fiji and the South Pacific. Tombo Tuna is flown in directly to us on a daily basis.

The Albacore is the only tuna species used for white meat tuna. It has a moderate to full flavor and a firm texture. It is known as "The Chicken of The Sea" because of it's mild flavor.

Grilled Pepper Crusted Albacore Tuna

Serves 2

Items You Will Need:

  • 2 (5-ounce) fillets of albacore tuna
  • olive oil
  • 2 tablespoons coarsely ground black pepper
  • 2 teaspoons salt

Directions to Make:

  1. Pre-heat a stovetop grill pan or outdoor BBQ grill.
  2. Dry the albacore fillets well and brush lightly with olive oil. Combine the pepper and salt on a shallow plate. Press the fillets into the salt and pepper mixture to coat. Coat the fillets lightly for less pepper or press firmly into the salt and pepper for a hotter, more peppery result.
  3. Grill for 2 minutes per side. Remove and serve with lemon wedges and parsley.
  4. Scatter the dill, avocado and sliced radishes over the top and serve with the pumpernickel bread toasts.
