Sushi Flavored Grilled Mount Cook Alpine King Salmon
- 1 tablespoon flaky sea salt
- 1 tablespoon castor sugar
- Juice of 1 lime and lemon
- 1 ½ tablespoons basil, chopped
- 2 thinly sliced Mount Cook Alpine Salmon fillets
Mix the salt, castor sugar, basil, lemon and lime juices in a cup. Pour onto the salmon and rub in allowing the citrus juices to marinate and partially cook the fish. Refrigerate the fish for 10 - 15 minutes, then in a small, oil sprayed pan slightly cook the salmon for 1 minute each side. Place the fish on a low temperature grill for 3 minutes each side, remove and serve immediately. This can be enjoyed with some grilled potatoes or vegetable fried rice.
