Opah or Moonfish as it is sometimes called in tribute to its large, round profile. Opah has long been regarded as a good luck fish by old time longliners and was never sold, only given away as a gesture of goodwill. This cooks to a brown color. The Opah’s large-grain, fatty flesh is popular among professional chefs.
Opah is available year-round. The opah harvest is largely incidental, since the opah is a solitary fish and does not swim in schools. Harvests of these individual fish follow no set pattern or ocean in a specific geographic area. Opah is long-line harvested in the waters of Hawaii, Fiji and the South Pacific. Fresh Opah is flown in directly to us on a daily basis.
