Fresh Striped Sea bass, called Atlantic Striped Bass or Shima Suzuki in Japanese, is known by the dark brownish-black, broken-line stripes that run the full length of its body, which ranges anywhere from twenty to forty inches.

Striped Sea Bass aqua-cultivated in the state of California and also caught in the wild. In the wild Striped Sea Bass are among the most popular sport fishes, caught by anglers using the hook and line, trolling technique. While farm raised Striped Sea Bass are harvested year round and they are preferable than wild Striped Sea Bass as a food source because they yield a significantly larger portion of meat than their wild relative.

Flesh that is pinkish white in color and firm in texture when uncooked, becomes pure white and moist due to the high oil content after cooking. Fresh Striped Sea Bass also has a subtle and slightly sweet taste, which makes it a favorite at the table.

Baked Sea Bass With Garlic Butter And Herb Bread Crumb Topping


  • 1 cup fresh parsley, finely chopped
  • 3 garlic cloves, finely chopped
  • 1 teaspoon thyme leaves
  • 1 lemon, juiced
  • 1 tablespoon regular butter
  • 1/2 stick unsalted butter
  • 5 ounces of leftover bread
  • 4 fresh Striped Sea Bass fillets
  • Salt and black pepper


Garlic butter and herb breadcrumbs. In a large frying skillet melt the stick of unsalted butter and add the chopped garlic. While the butter is melting break the bread into crumbs and as soon as the butter begins bubbling, add the breadcrumbs to the skillet and turn off the flame. Fuse the breadcrumbs and butter by tossing until there is no butter left visible in the skillet and it has all been absorbed into the bread. Mix in the parsley and season with salt and pepper.

Fish fillets:

Season the fillets with thyme leaves, lemon juice, salt and pepper, then marinate for 10 - 15 minutes. Then spread the buttered breadcrumbs over the top of each fillet and bake for 15 minutes until the breadcrumbs are golden brown and the fish should be just cooked. Serve with some pepper fried rice or creamed pasta.
