INGREDIENTS
Cooking spray
4 Frozen Mahi Mahi fillets, thawed
1 red pepper, sliced
1 orange pepper, sliced
1 yellow pepper, sliced
1 jalapeno, seeds and stem removed and sliced
1 large yellow onion, sliced
1/3 cup sunflower oil
1 tbsp chili powder
2 tsp cumin
2 tsp smoked paprika
1 tsp garlic powder
½ tsp salt
½ tsp freshly ground black pepper
Juice of 1 lime
8 tortillas, warmed
DIRECTIONS
Preheat oven to 425 degrees and coat a large rimmed baking sheet with cooking spray.
In a small bowl, whisk together sunflower oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
Place sliced veggies on a baking sheet and top with all but 2 tablespoons of the spice marinade. Bake for 10 minutes.
Turn the oven heat down to 400 degrees. Place Mahi Mahi fillets on top of veggies and brush with remaining spice marinade. Bake for an additional 20 minutes.
Once cooked, slice Mahi Mahi and squeeze lime juice over the contents of the entire pan. Spoon generous portions into warmed tortillas and enjoy.
