Mahi-Mahi fillets have a sweet, mild-to-moderate flavor that stands up well to a variety of cooking methods and ingredients. This fish is lean with fairly firm and large flakes, and a great choice all year round. Fresh or Frozen (Fin-fish item), each comes in standard packs containing 2 pieces of either 6 or 8 ounce portions.

How to properly defrost frozen seafood: We recommend that all frozen seafood be defrosted by placing product in the refrigerator for 12 to 24 hours depending upon the density. Never force thaw a product by running it under water (hot or cold as it can cook the product). Not only does this reduce the flavor, but it is also a health hazard.


We love a sheet pan dinner, especially when it features succulent chunks of fajita-style Mahi Mahi. This meal is quick and easy, and only tastes like you spent all day in the kitchen. Serve it with cilantro lime rice and plenty of fresh guacamole for a meal your family will ask for again and again.


  • Cooking spray
  • 4 Frozen Mahi Mahi fillets, thawed
  • 1 red pepper, sliced
  • 1 orange pepper, sliced
  • 1 yellow pepper, sliced
  • 1 jalapeno, seeds and stem removed and sliced
  • 1 large yellow onion, sliced
  • 1/3 cup sunflower oil
  • 1 tbsp chili powder
  • 2 tsp cumin
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp freshly ground black pepper
  • Juice of 1 lime
  • 8 tortillas, warmed


  1. Preheat oven to 425 degrees and coat a large rimmed baking sheet with cooking spray.
  2. In a small bowl, whisk together sunflower oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
  3. Place sliced veggies on a baking sheet and top with all but 2 tablespoons of the spice marinade. Bake for 10 minutes.
  4. Turn the oven heat down to 400 degrees. Place Mahi Mahi fillets on top of veggies and brush with remaining spice marinade. Bake for an additional 20 minutes.
  5. Once cooked, slice Mahi Mahi and squeeze lime juice over the contents of the entire pan. Spoon generous portions into warmed tortillas and enjoy.
