Roasted Wild King Salmon With Green Herbs
- 2 Wild King Salmon fillets
- ¼ cup olive oil
- 2 tablespoons lemon juice
- ½ cup green and white scallions, minced
- ½ cup dill, minced
- ½ cup fresh parsley, minced
- ¼ cup dry white wine
- Salt and black pepper
In a roasting dish, season the King Salmon fillets with salt and pepper. Then the lemon juice and olive oil should be whisked together and the mixture drizzled evenly, over the fish. Allow this to marinate for at least 15 minutes. Then the dill, scallions and parsley should be stirred together in a small bowl and used to coat the fillets. Returning the fish to the roasting dish, pour the wine in and then roast for 10 - 15 minutes, until just cooked at the center. Allow to rest for 10 minutes after roasting then serve.
