Fresh Arctic Char:
Although there is commercial and recreational fishing for Arctic char, aquaculture production is the primary source of Arctic char in the U.S. Market. Iceland, Canada, and Norway. Arctic char is also known as Iwana when prepared for sushi.
Farmed Arctic char is available year-round and it has a sweet, delicate, rich taste. Taste is similar to salmon, but may will attest that the taste is far superior. Char generally have a finer flake than salmon and trout and will retain firmness when cooked. Te redder the flesh, the more prized the char, but flesh can also range pink to whitish. It is a very good source of protein, and a food able to provide almost 16% of your daily value for omega-3 fatty acids.
Our arctic char is farmed in inland closed-containment systems that pose no environmental threat to the surrounding ecosystems. Our Arctic char is considered a "Best Choice" by the Monterey Bay Aquarium because these systems have minor environmental impacts.
Arctic Char is an excellent substitute for any recipe that calls for Salmon.
Use your fresh arctic char fillet within 2-3 days of arrival otherwise freeze them.
