Our Fresh Ocean Trout comes from the remote South-west coast of Tasmania, where the cool wilderness waters of the Franklin-Gordon Rivers collide with the salt water of the Great Southern Ocean. Along with our partners, we have spent decades perfecting this superior tasting artisan product. Their pioneering work has been recognized by an Order of Australia Medal.

Take your taste buds on a fresh ocean trout trip, to discover the flavor, lusciousness and creamy succulent texture and taste of this velvety fish. Namely referred to as the Tasmanian Ocean Trout, it is usually dressed with an ancient blend of spicy herbs, mingled in a zesty sauce flavored with Mexican-style stewed tomatoes and a mix color of fresh green ingredients. Where the spicy herbs, nicely offsets the smooth, creamy small flakes texture of this steamed trout. Creating a unique balance, and a beautiful symphony of delicate flavors that can surely deliver a real sensory treat.

This sprightly dressed fish contrasts texture and seduces both eye and palate. Each bite, full of flavor, freshness and color to spark even the grayest cloudy day, and the rustic tomatoes adding a breath of aroma. This simple yet savory and colorful sauté-calls for fresh egg noodles, which can be cooked up in 3 to 4 minutes. PAN-FRIED TASMANIAN OCEAN TROUT WITH BROWN BUTTER PINE NUT SAUCE

Ocean Trout is inherently velvety in texture and rich in taste, which makes it an excellent pairing with another velvety and rich delicacy: pine nuts. And because there’s nothing wrong with being a little extra, we took that richness a step further with the addition of nutty brown butter. This meal sounds like something you’d get off the menu at a five star restaurant, but it’s actually incredibly simple to cook right at home. If you’re looking for a quick and easy weeknight meal that only tastes like it cost a million bucks, you’ve found it right here.

INGREDIENTS

  • 4 Tasmanian Ocean Trout fillets
  • Extra virgin olive oil
  • Salt and pepper
  • 1 stick unsalted butter
  • 3 shallots, minced
  • 1 tbsp chopped fresh sage
  • ½ cup pine nuts
  • Lemon

DIRECTIONS

  1. Preheat the oven to 250 degrees Fahrenheit. Pat dry Tasmanian Ocean Trout fillets and season on all sides with salt and pepper. In a large skillet over medium-high heat, add about a ¼ inch of extra virgin olive oil and allow to warm up. Once ready to go, add Tasmanian Ocean Trout to pan, skin side down, and cook for 6-7 minutes, or until cooked about 2/3 of the way through. Flip the fish and finish cooking on the other side until golden, about 2-3 minutes. Remove fish from the pan and place on a paper-towel lined plate. Then transfer to a baking sheet and place in the oven to keep warm.
  2. In another large skillet, melt butter over low to medium heat. Add shallots, sage, and pine nuts and cook, stirring frequently, until butter has become golden brown with a nutty aroma—about 2-3 minutes. (Butter will start foaming before it’s ready.) Remove skillet from heat so as not to burn the butter.
  3. Remove Tasmanian Ocean Trout from the oven and place fillets in a skillet with brown butter pine nut sauce. Coat fish well in the sauce, then add a squeeze of fresh lemon juice over the top.
