SMOKED SALMON CANDY COBB SALAD
We love Smoked Salmon Candy (also called Indian Candy) thawed and right out of the bag, but we also love to use it as a smokey flavor component in a dish. Similar to bacon, Smoked Salmon Candy adds a hint of meaty richness to every bite of this classic cobb salad, and pairs excellently with the crispness of the iceberg lettuce and the creaminess of the eggs, blue cheese, and avocado. It’s so good in fact that you might never go back to bacon in your cobb salad again.
INGREDIENTS
- ½ lb Smoked Salmon Candy, thawed and diced
- 4 hardboiled eggs
- 1 head iceberg lettuce (can substitute romaine)
- 4 radishes, sliced thin
- 2 Roma tomatoes, seeded and chopped
- ¾ cup crumbled blue cheese
- 1 avocado, pitted and diced
- 3 scallions, chopped
For the dressing:
- 3/4 cup avocado oil
- 2 tbsp lemon juice
- 2 tbsp red wine vinegar
- 2 tbsp water
- 1 tbsp Dijon mustard
- 2 cloves garlic, finely minced
- 2 tsp granulated sugar
- 1 tsp Worcestershire sauce
- 1 tsp onion powder
- ½ tsp salt
- ¼ tsp pepper
DIRECTIONS
- Make your cobb salad dressing by combining all dressing ingredients in a mason jar and shaking vigorously to combine. You can also whisk together in a bowl. Taste and add more salt and pepper if desired, then set aside.
- To make your salad, chop iceberg lettuce and place in a large bowl. Top with chopped hardboiled eggs, tomatoes, radishes, avocado, and scallions, and then add crumbled blue cheese. Finish by topping with the Smoked Salmon Candy, and toss to combine.
